Picnic torpedoes

Ingredients
  • 4 crusty long dinner rolls

  • 1 cucumber, deseeded, finely diced
  • 2 pickled onions, finely diced
  • 1 carrot, peeled, grated
  • ½ bunch dill, finely chopped
  • 2 Tbsp mayonnaise
  • 1 Tbsp tomato sauce
  • 150g tuna in oil
  • 150g sliced leg ham, shredded
  • 150g smoked chicken breast, shredded
  • ½ cup antipasto vegetables, chopped (sundried tomatoes, artichoke hearts and grilled eggplant)
Method

  1. Cut 1 tip off each bread roll, then use the handle of a wooden spoon to create a pocket inside each roll.
  2. Combine cucumber, pickled onion, carrot, dill, mayonnaise and tomato sauce in a mixing bowl. Divide cucumber mixture between 4 small bowls.
  3. To each of the 4 bowls, add either tuna, ham, chicken or antipasto vegetables and mix well. Stuff each roll with a different mixture. To serve, cut rolls into bite-size slices.
